A few inches of snow kept us in this morning. Inspired by Homing and Matched Pearls, we had my warm, wintry oatmeal for breakfast.
While bringing 1 1/2 cups of water to a boil, sprinkle enough cinnamon to cover the top of 3/4 cup of old-fashioned oats. Stir in the oats. Turn down the heat so it doesn't boil over. Stir a few times while it cooks for about 4 minutes. Add 1 tsp. vanilla and cook a couple more minutes- until you can't see the water anymore. Put on a lid and let it sit for 5 minutes. This gives you just enough time to broil some buttered bread in the oven.
This is especially pretty in my peach Fiesta bowl with milk and sugar. A sprinkle of chopped pecans would be a yummy topper.
The back roads will still be icy and slick tomorrow, so they've already announced school is closed. Maybe we'll try this again in the morning.
